The windy weather and chilly temperature combined with a need to use up a glut of vine ripened tomatoes bought at a bargain price in Aldi got me thinking about soup today. In particular a spicy tomato soup.
The tomatoes have been halved and sprinkled with dried basil, sea salt and fresh ground black pepper. I have sliced a handful of garlic cloves and dotted them about the dish. Drizzled them all with olive oil and put it in the oven at about 150 (fan oven) they will spend about 45 to 55 minutes slowly softening and giving up the delicious juices. Once done I will leave them to cool for a while.
I will chop an onion and sweat that off til soft and golden Before adding the softened,roasted tomatoes and Garlic with all the juices. I also add a good pinch of chilli flakes.
I then add some chicken stock. Depends on the amount of tomatoes but about a pint or so on this occasion.
Let it boil up for a while, maybe 10 minutes keeping an eye on it and sitting frequently. Add a good handful of grated Parmesan cheese and stir that in. Then blend it all up and serve with some crusty bread.
I have some Brie that needs using up so I will put thin slices of that on top of some wafer thin ham o n the bread before toasting it for a while to melt the cheese.
