In a bowl mash the banana well with a fork and then break the egg in and beat together .
Melt a tablespoon of coconut oil in a frying pan and put small scoops of the mixture in. I have found over time that it is best to put about a large tablespoon of mixture in for each pancake and to leave plenty of room around each to enable safe turning ;) They can be tricky to turn but give them plenty of time to brown well on one side and then turn....practice makes perfect :) I was surprised how many you can get from such basic ingredients.
I do them in small batches and add more oil as required.
I often add ground almonds to the bowl once I have mixed the banana and egg together and this does make for a slightly firmer mix.
I enjoyed some lovely ripe Strawberries, a dollop of greek yogurt and a drizzle of maple syrup on mine this morning...I have had ripe pears and a drizzle of honey before but the sky is the limit for combinations :)
