Every month I meet with four friends to meditate. We have been doing this for many years. I have forgotten the exact number of years but it has to be at least twelve! We take turns hosting and it is my turn tomorrow. Cake and tea play an important part in our get togethers. Quite a while ago I was looking for a sugar free healthy cake recipe ( to accommodate my friends who were cutting sugar and dairy from their diet ) and followed a link on Facebook where I found a recipe for a healthy oat snack bar using just four ingredients. Bananas, oats, nuts and dates. I made it up ( not actually holding out much hope that it would be edible ) and was very pleasantly surprised ;) The texture was quite hard and chewy so over time I have experimented and this is how I make them. The added ingredients give it a moister more cake like texture.
5 ripe bananas
4cups of rolled oats
I cup of chopped dates
2 cups of chopped nuts
3 tbs coconut oil ( melted )
Half a cup of ground almonds
1tbs vanilla essence
Sesame seeds to sprinkle on top and nutmeg to sprinkle on before baking.
Peel and break up the bananas then mash them until they become a thick liquid consistency.
Then simply add all the other ingredents and mix well.
Once it has all been mixed in put into buttered baking trays and sprinkle the sesame seeds and nutmeg on top. Bake at 200 ( fan oven ) for about 20 to 25 minutes.
They come out beautifully crispy on the edges but still moist inside.
