One of the jobs that I had been looking forward to doing today was to tackle the mountain of sweet potatoes I had accumulated by doing my usual trick which is to write out the menu for the week putting the ingredients needed on the list and then forgetting to check the cupboards!
I had planned to make Sweet potato cake today...We had been due to meet with my Sister and her family this afternoon and it would have been perfect with a cuppa. We had been unsure how I would be feeling this afternoon so had to cancel though..
With Alan's help I set about making the cakes and also some sweet potato mash with garlic,coriander and cream cheese.
Alan peeled some sweet potatoes for me and when the cakes went in the oven I quartered the sweet potatoes and put them in a casserole with a drizzle of olive oil, a sprinkle of chilli flakes and a handful of garlic cloves. They baked with the lid on for about 45 mins and were then mashed. I would normally put goats cheese in but as I didn't have any I used some cheese triangles and some chopped coriander. This is delicious hot with a main meal but is equally delicious the next day cold on crackers or crisp bread.
The cake mixture makes two loaf tins and once they were cooled I cut them in half and froze three portions and also froze the sweet potato in portions.
Another job that had to be done today was to prepare tea for tomorrow night as Milly has a Dr app around tea time ( and who knows just how long you can be sitting in the waiting room! ) and Alan needs an early meal as he goes out to Tai chi. Moroccan style potato bake was on the menu and the roasted peppers needed for it went in the oven at the same time as the cakes and mash.
It was very easy to make and it looks and smells gorgeous! I am sure that it will be even better once the flavours deepen overnight. I am looking forward to eating it with some veg tomorrow.
Luckily for a very easy tea tonight I had a shepherds pie in the freezer that Alan could have and a butternut squash, chickpea and lentil stew for me..
A slice of sweet potato cake with greek yoghurt and a drizzle of manuka honey finished the meal off nicely :)
