Not the best picture of this cauliflower Pizza base recipe..I have wanted to make cauliflower pizza base for ages and have had various recipes ( there are sooo many variations out there! ) pinned on pinterest, in my bookmarks ( which is embarrassing in the sheer number of pages and it is so far beyond being able to find anything in them without spending hours searching through!! ) I have posted them on statuses on facebook and I have even printed copies off at various times - which have ended up in the shelving between my fridge a freezer where the idea is to file them but the reality is that they get added to the pile and stay there!! See that.... two layers of recipe books behind the bottles...right at the back the shelf is stuffed full with piles of recipe books and papers. Hmmm.......think it might be time to tackle this little area.......at some point......maybe ;))
The bookmarks though..oh my......I think that it has gone beyond sorting and I will just have to delete and start again!
Well, this week I had the recipe - a new one I found on an evening stroll round pinterest :) - and the cauliflower at the same time.....bingo :))
I only had cheddar cheese so used that instead of Mozzarella.. I also roasted some peppers and onions and put them on with the fresh tomato slices.
It was delicious!
It ended up slightly caramelised - charred might be another way to describe it ;) - I set the timer to give it five more minutes but got sidetracked and didn't actually press the button to set it.. Luckily caught it before it was ruined...Even with the crispy tops of the peppers it was still gorgeous.
So light and tasty I had just over a quarter of it with salad and was full after but not in the least bit heavy.
Next time I would make the base thinner...perhaps even make two smaller pizzas.
Tonight I had some of the leftovers which I added a little more cheese to and warmed in the oven. I wasn't having salad and thought it might be a little dry so as I had some home made pizza tomato sauce in the freezer I defrosted that and heated it up and had on the side which was lovely.
How versatile is the humble cauliflower.... I have seen other ways to use it and will be giving those a go and will report back ;))
